Recipes for cakes, bakes and other WI cooking successes

Nigella Lawson’s Chocolate Guinness Cake.

Spiced Pan Roasted Pear Cake

1 cup of soft brown sugar
4oz butter
1 1/3 cups plain flour
1 1/3 cups castor sugar
3 tsp cinnamon
2 tsp baking powder
1/2 tsp salt
3 large eggs
1/4 pint corn oil
1 pear, coarsely grated
1 tbs grated ginger
6 pears, peeled, cored and cut into 8

Preheat oven to 350F

Sprinkle brown sugar over bottom of heavy 12″ black pan
(2 1/2″ sides).  Add butter.  Place in oven for 5 minutes.

Mix flour, sugar, cinnamon, baking powder and salt.  Using a mixer beat in eggs and oil.  Mix in grated pear and ginger.

Remove sugar and butter from oven.  Which together.  Arrange pear slices in frying pan.  Pour batter over pears and bake until cake is springy to touch and skewer is clean.  (Approx 1 hour)    Allow frying pan to cool.  Loosen edges and turn out.

You can use a baking tray rather than a frying pan.
